The amino acid beta alanine is built up into carnosine in various body tissues (mainly in the muscles). Carnosine is a natural buffer substance. A drop in pH during exercise can cause the trained muscle to become acidic. This can then be felt as a burning sensation. By buffering acidic hydrogen ions and the lactic acid that is formed, carnosine is jointly responsible for a stable or balanced pH value in the muscles. Strong muscles have a stable pH because they have larger stores of carnosine. carnosine (lat. Carnis = meat) is mainly found in the muscles. In natural foods of everyday life, carnosine is mainly found in white meat (chicken, turkey, etc.). You will look in vain for carnosine in grain products such as pasta or whole grain products.
